Ingredients

  • 2 cups whole raw walnuts
  • 8 ounces cremini mushrooms
  • 2 tablespoons coconut aminos or tamari
  • 2 tablespoons tomato paste
  • 3 cloves of garlic
  • ½ tablespoon cumin
  • ½ tablespoon smoked paprika
  • ½ tablespoon onion powder
  • ½ teaspoon sea salt
  • 2 tablespoons olive oil, divided

Instructions

  1. Roughly chop the mushrooms and put them in a food processor.
  2. Add the rest of the ingredients into the food processor and pulse until the mixture is crumbly. Make sure not to overdo it. Don’t have a food processor? Use a sharp knife to chop everything and put it in a bowl with the spices.
  3. Then in a skillet over medium-low heat, add 1 tbsp of olive oil. Add the chopped mixture and cook for about 8 minutes. Stir until it becomes dry and browned. Lastly, stir in the remaining 1 tbsp of olive oil.
  4. Store in the refrigerator for 1 week or can freeze for 2-3 months.
