Vegan Omlette

Vegan omelette made with tofu, spices, and fresh vegetables on a plate.

Ingredients

1 tbsp Gut Broth (or vegetable broth)

1 tbsp garlic-infused olive oil

1 scallion (green part only), sliced

1 Roma tomato, chopped

1/4 tsp crushed red pepper flakes (optional)

1 tsp Italian seasoning

8 ounces extra-firm tofu, pressed

1/4 tsp turmeric (for color, optional)

Pinch of salt

1 tbsp capers

1/4 cup black olives, sliced

Fresh parsley, for serving, chopped

Instructions

  1. In a large skillet over medium heat, add broth, olive oil, scallions, tomato, optional red pepper flakes, and Italian seasoning. Stir to combine and sauté for 5 minutes, or until the vegetables are tender.
  2. Move vegetables to one side of the pan. Crumble the tofu into the so it resembles eggs. Add optional turmeric and salt. Cook for 2-3 minutes. Add the capers and black olives. Stir everything together, and add salt and pepper if necessary.
  3. Divide into bowls and top with fresh parsley.

Note: If you don’t have Italian seasoning, then you can use 1/2 tsp thyme and 1/2 tsp dried oregano.
