Vegan Siracha Mayo

Ingredients

2 ounces soba noodles, uncooked

2 cup Gut Broth (or vegetable broth)

1 tbsp seasweed

1/4 cup miso paste

1-2 tsp water

1/2 cup spinach, chopped

1/2 cup scallions, chopped

6 ounces tofu, drained and cubed

1/4 cup mushrooms, sliced

Instructions

  1. Cook the soba noodles according to the package instructions. Then drain and rinse the noodles to stop the cooking. Set aside.
  2. Over medium-high heat, bring 2 cups of water and broth to a boil. Add the seaweed, then reduce the heat. Simmer for 5 minutes.
  3. In a small bowl, combine miso with water and create a thick, creamy sauce. Set aside.
  4. Add the spinach, scallion, tofu, and mushrooms to the pot. Cover and simmer for 5 minutes.
  5. Remove from the heat. Stir in the miso paste and noodles. Serve.
