Ingredients

Crust:

3/4 cup dates (about 10, pitted)

1 cup almonds

Pinch of salt

Water

Filling:

1 cup raw cashews (soaked for 30 minutes)

1 cup frozen strawberries, chopped

1/4 cup coconut milk (full-fat)

2 tbsp coconut oil

1/4 cup 100% pure maple syrup

2 tbsp lemon juice, fresh squeezed

Instructions

Crust:

  1. In a food processor, combine the dates, almonds, a pinch of salt, and a splash of water (1 tbsp). Blend until mixture clumps together. Line a muffin tin with paper liners or use a silicone muffin mat. Place about 1 tbsp of crust mixture in your muffin cups and shape to form the crust.

Filling: 

  1. Place all filling ingredients in the food processor or high-speed blender, and blend until mixture is smooth and creamy looking. Evenly divide the filling between the prepared muffin cups. Place in the freezer for 3-4 hours or until set and hardened.

Note: These should be stored in the freezer. To enjoy, you can let thaw at room temperature for a few minutes.
