Ingredients

200g mushrooms, cleaned and sliced
1 bell pepper, diced
1 onion, finely chopped
2 tomatoes, pureed
1 cup firm tofu, cubed
2 tbsp olive oil
1 tsp cumin seeds
1 tbsp ginger-garlic paste
1 tbsp Garam masala
1 tsp red chili powder/paprika
1/2 tsp turmeric powder
Salt to taste
Fresh coriander/cilantro  leaves for garnish

Instructions

1. Heat oil in a pan, add cumin seeds, and let them splutter.
2. Add chopped onions and sauté until golden brown.
3. Stir in ginger-garlic paste and cook for a minute.
4. Add tomato puree, garam  masala, red chili powder, turmeric powder, and salt. Cook until the oil separates.
5. Add sliced mushrooms, diced bell pepper, and cubed tofu. Mix well.
6. Cover and cook on low heat until the mushrooms are tender and the flavors blend.
7. Garnish with fresh coriander leaves before serving.
