Chia Pudding!

Chia pudding is a healthy and filling snack. Chia seeds are rich in antioxidants and omega 3s. With their high fiber content, they feed your good gut bugs and balance your blood sugar. Feel free to play around with flavors like cacao, fruit, nuts, etc.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened nut milk
  • 1-2 tablespoons natural sweetener of your choice (I like monk fruit drops, stevia, maple syrup or honey)
  • 1/2 teaspoon vanilla extract (optional)
  • 1 scoop protein powder (optional)
  • Fresh berries for topping

Instructions

  1. In a mixing bowl, combine the chia seeds, milk, sweetener, and vanilla extract (if using). Stir well to make sure the chia seeds are evenly distributed in the milk.
  2. Cover the bowl and place it in the refrigerator for at least 2-3 hours or overnight. During this time, the chia seeds will absorb the liquid and form a pudding-like consistency.
  3. After the resting time, give the chia pudding a good stir to break up any clumps that may have formed. The pudding should be thick and creamy.
  4. If the consistency is too thick for your liking, you can add a little more milk and stir again until you reach your desired consistency.
  5. Serve the chia pudding in individual bowls or glasses. Top it with fresh berries and if you want you can add on any nuts, of your choice for more added flavor and texture.
