Healthy roasted asparagus seasoned with garlic and lemon zest. Perfect side dish for nutritious meal.

Ingredients

1 bunch of fresh asparagus

2 tablespoons of olive oil

2 cloves of garlic, minced

1 teaspoon of lemon zest

Salt and black pepper to taste

 

Instructions

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Wash the asparagus thoroughly under cold water and trim off the tough ends.

3. In a small bowl, combine the olive oil, minced garlic, lemon zest, salt, and black pepper. Stir well to mix.
4. Place the trimmed asparagus spears on the prepared baking sheet in a single layer.
5. Drizzle the olive oil mixture evenly over the asparagus, making sure each spear is coated.
6. Gently toss the asparagus to ensure even seasoning.
7. Roast in the preheated oven for 12-15 minutes, or until the asparagus is tender and slightly caramelized, depending on the thickness of the spears.
8. Once done, remove the baking sheet from the oven and transfer the roasted asparagus to a serving platter.
9. Serve immediately as a side dish or garnish with additional lemon zest for extra flavor.
