Tofu Sushi Wraps

Ingredients
1 cup rice
1/2 tsp rice wine vinegar
2 tsp coconut aminos
6 nori sheets, cut into quarters
1 cucumber, cut into matchsticks
1 ripe mango, peeled, cut into matchsticks
1/2 cup pickled beets
8 ounces baked tofu
Avocado, sliced thin
Instructions
- Bring 2 cups water to a boil in a large pot and add the rice. Cover the lid, reduce the heat, and cook for 15-20 minutes.
- After rice is cooked, add coconut aminos and rice wine vinegar.
- Press a small handful of rice together to form a ball. Place on top of nori and top with cucumber, mango, pickled beets, tofu, and avocado.
- Drizzle with sriracha mayo. Gently fold the wraps together and enjoy.
Note: You can make sushi bowls, but tossing all the ingredients in a bowl together.
