Chickpea Cookie Dough

Delicious chickpea cookie dough with chocolate chips, perfect for healthy snacking or dessert.

Ingredients

1 15-oz can chickpeas, drained and rinsed

1/3 cup oat flour

1/4 cup nut butter (almond or peanut)

2 tbsps 100% pure maple syrup

1 tsp vanilla extract

Pinch of salt

1/4 tsp cinnamon

1/3 cup dairy free chocolate chips

Instructions

  1. Place the chickpeas, oat flour, nut butter, syrup, vanilla, salt, and cinnamon in the food processor. Blend until a dough forms. Taste test, and add more syrup if necessary.
  2. Remove blade from food processor, or transfer to bowl, and fold in the chocolate chips until just combined.
  3. Use tablespoon to measure out the dough, then roll into balls and place on baking sheet or plate. Place in the fridge to harden for 15 minutes. Store in an airtight container for up to 1 week in the fridge.

Note: To make the oat flour, place 1/2 cup of rolled oats in the food processor or blender and blend until a flour forms.
