Asian-Inspired Noodle Bowl

Healthy Asian-inspired noodle bowl with tofu, cabbage, and green onions.

Ingredients

Asian-Inspired Dressing

8 ounces soba noodles, uncooked

2 cups shelled edamame

2 carrots, thinly slicd

2 cups cucumber, diced

Crispy Baked Tofu

2 tbsp hemp seeds, for serving

2 scallions, for serving

1 avocado, for serving

Instructions

  1. Cook the noodles according to the package directions. Drain and rinse in cold water to stop cooking process.
  2. Return noodles to the pan and add half the Asian-Inspired Dressing. Divide the noodles into four bowls or containers (to store) and top with edamame, carrots, cucumber, and tofu. Drizzle with the remaining sauce and top with hemp seeds, scallions, and avocado.
