Ingredients

4 fish fillets (wild salmon, sea bass)

2 tablespoons olive oil

2 cloves garlic, minced

Zest and juice of 1 lemon

1 teaspoon dried thyme / parsley/ dill (or 1 tablespoon fresh thyme/ parsley/ dill)

1 teaspoon dried oregano (or 1 tablespoon fresh oregano)

Salt and pepper to taste

Lemon slices for garnish

Instructions

1. Preheat your grill to medium-high heat.

2. In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, dried thyme, and dried oregano.

3. Pat the fish fillets dry with paper towels and place them on a plate or shallow dish. Season both sides of the fish with salt and pepper.

4. Pour the olive oil and herb mixture over the fish fillets, making sure they are evenly coated. Let them marinate for about 15-30 minutes, if time allows.

5. Once the grill is hot, lightly oil the grates to prevent sticking.

6. Place the fish fillets on the grill and cook for about 3-4 minutes per side, or until the fish is cooked through and easily flakes with a fork. Cooking time will vary depending on the thickness of the fillets.

7. Carefully remove the fish from the grill and transfer to a serving platter.

8. Garnish with lemon slices and serve hot.
