Chickpea Meatballs

Ingredients

1 1/2 tbsp ground flaxseed

1/4 cup water

3 cups chickpeas, drained and rinsed

3/4 cup walnuts

3/4 cup breadcrumbs

3 tbsp garlic-infused olive oil

4 tsp Italian seasoning

Pinch of salt and pepper

2 cups marinara sauce

6-8 ounces dried pasta

Instructions

  1. Preheat the oven to 450. Line a baking sheet with parchment paper. Set aside.
  2. In a small bowl, combine the flaxseeds and water. Set aside to gel.
  3. In a food processor, place the walnuts and chickpeas, and blend until finely chopped.
  4. Place mixture in a large bowl. Add the flaxseeds, breadcrumbs, olive oil, and Italian seasoning.* Stir together the mixture until well-combined. Add water if necessary. Add salt and pepper to taste.
  5. Scoop out 1 tablespoon of mixture at a time, and roll into balls. Place on the baking sheet.** Bake for 20 minutes.
  6. Meanwhile, cook pasta according to package directions.
  7. Serve over warm pasta and your choice of marinara sauce.

Note:

*Instead of Italian Seasoning, you can use 1.5 tsp each of oregano, basil, and parsley.

** To make crispy meatballs, lightly drizzle meatballs with olive oil before baking.
