Coconut Oatmeal Energy Balls

These fiber-rich oatmeal balls are filled with omega-3s and healthy fats to help curb cravings and keep you satiated!

Ingredients

1 cup old-fashioned oats

1/4 cup unsweetened coconut flakes

1/3 cup nut butter (almond or peanut butter)

2 tbsp 100% pure maple syrup

1 tbsp chia seeds

1 tbsp hemp seeds

1 tsp vanilla extract

1/4 cup dark chocolate chips, finely chopped

Instructions

  1. Place the oatmeal, coconut, nut butter, maple syrup, chia and hemp seeds, and vanilla in a food processor. Pulse until just combined. You can also mix by hand if you don’t have a food processor. If it is too sticky, you can add more oatmeal. If too dry, then you can add peanut butter. Add the dark chocolate until just combined.
  2. Use a tablespoon to measure out mixture. Roll each portion into a ball. Store in an airtight container for up to 1 week in the fridge. Store in the freezer for up to 3 months.

Note: Alternately, instead of dark chocolate chips, use a dark chocolate bar and finely chop.
