Lentil Tacos

Vegetarian lentil tacos with fresh vegetables and guacamole on a wooden serving board.

Ingredients

1/2 cup walnuts, chopped finely

1 tbsp Gut Broth (or olive oil)

1 Roma tomato, chopped

2 14.5-ounce cans lentils, drained and rinsed (or opt to substitute 1 3/4 cup cooked lentils, homemade)

2 tsp dried oregano

2 tsp ground cumin

1 tsp smoked paprika

2 tbsp chili powder

Pinch of salt

1/4 cup water

Tacos:

4 corn tortillas

Taco Filling

Creamy Cilantro sauce

Taco toppings (lettuce, tomatoes, cilantro, avocado, lime)

Instructions

  1. Over medium heat, add walnuts to a large skillet. Toast for about 2 minutes, stirring often. Remove the skillet and set aside.
  2. Add oil and tomato to the skillet and cook for 3-4 minutes, until tomato is soft. Add the lentils, spices, salt, and water. Gently mash the lentils with a wooden spoon or fork. Cook until heated through, about 5 minutes.
  3. Taste test, and add any additional flavorings or salt as needed.
  4. Assemble tacos using lentil filling and and any toppings desired. For some added flavor, squeeze some lime juice over the top.
