Cilantro Lime Rice

Ingredients

1/2 cup uncooked basmati rice

1 cup water

Bay leaf (optional)

Pinch of salt

2 tbsp lime juice, fresh squeezed

1/4 cup cilantro, finely chopped

Instructions

  1. In a small saucepan, over medium-high heat, bring the water to a boil. Add the rice and bay leaf, and cover with tight-fitting lid. Reduce the heat to low and cook until rice is tender or according to package directions. Once finished cooking, remove the bay leaf from the rice and discard.
  2. Stir in a pinch of salt, lime juice, cilantro.
