Indian Curry Tofu

Ingredients
2 tsp garlic-infused olive oil
2 tbsp fresh grated ginger
1 red chile pepper, seeded and chopped (Thai or Cayenne)
1 1/2 tbsp curry
1 tbsp ground coriander
1 tsp ground turmeric
1 tbsp ground cumin
1/2 tsp ground cayenne pepper
1 tsp mustard seeds
Pinch of salt and pepper
5 cups spinach
2-3 tbsp water
1 cup coconut milk (canned)
1 cup tomato sauce
1 14-oz package of organic extra firm tofu
2 tsp arrowroot powder (or cornstarch)
2 cups cooked rice
Cilantro, to serve
Instructions
- In a medium skillet over medium heat, heat 1 tsp olive oil. Stir in all spices and salt and pepper. Cook for 30-60 seconds.
- Add the spinach leaves and 2 tablespoons of water to wilt the spinach. Add an additional tablespoon of water if necessary. Mix spinach with spices.
- Add the spinach mixture to a food processor and pulse finely. Add the mixture back to the skillet and add coconut milk and tomato sauce. Allow to simmer for 30 minutes, stirring occasionally.
- Make the tofu while the spinach is simmering. Dice tofu into cubes and toss gently in a medium bowl with the cornstarch. Be careful to not break up tofu when mixing.
- In a large skillet over medium heat, heat the olive oil and then add tofu. cooking until tofu is golden brown and crispy. Add the tofu to the spinach mixture and stir to mix.
- Season with additional salt and pepper if needed.
- Serve with cooked rice and top with cilantro.
