Greek Lemon Chicken Soup

Who said you can’t eat soup for breakfast?! If you’re in my Key3 Metabolism Makeover program and you don’t like smoothies for winter, then this is a good alternative. It gives you some morning protein in an easy to digest and warming way!

Ingredients

  •  1 lb organic chicken, cooked and shredded
  •  3 carrots, chopped
  •  1 cup white onion, diced
  •  2 cups cauliflower rice
  •  6 cloves garlic, minced
  •  4 cups organic chicken broth (low salt) 
  •  2 organic egg yolks
  •  1/2 cup lemon juice
  •  2 cups kale or spinach, shredded
  • 2 tbsp olive oil 
  • 1/2 tsp crushed red pepper (optional)
  •  2 tbsp dried parsley (or fresh) 
  •  salt and pepper as desired 

Instructions

  1. Add olive oil, onion, garlic, carrots and cauliflower rice to a large pot over medium heat, and cooked until veggies are translucent.

  2. Add the chicken broth and parsley and heat for 10 minutes, stirring occasionally. In the meantime, mix the egg yolks in a bowl with a small amount of the chicken broth from the pot. Whisk together until well mixed.

  3. Add the mixed egg yolk, pre-cooked shredded chicken, kale, lemon, dried parsley, salt and pepper to the put.

  4. Simmer with the cover on for about 10-minutes. That’s it! Can sprinkle fresh parsley on if you want.
