Minty Citrus Salad

Bright and refreshing salad packed full of Vitamin C! This can be eaten as a side dish, snack, or even as a dessert.

Ingredients

2 large navel oranges, cut into segments

1 large grapefruit, cut into segments

2 mandarin oranges, cut into segments

1 lime, juiced

1 tsp 100% pure maple syrup

1 tbsp fresh mint, minced

Instructions

  1. Remove the peels from all the citrus fruits. Cut navel oranges and grapefruit into segments. Leaving the mandarin orange whole, cut into thin slices (slices should be in the shape of a circle).
  2. In a medium bowl, gently toss citrus fruits with lime juice and maple syrup. Divide between plates and top with fresh mint.
  3. Serve at room temperature or cold.
