Ingredients

  • 4 sliced zucchini
  • A handful of spinach
  • 1 tablespoon curry powder
  • 1 tbsp olive oil
  • 1 green onion
  • 1 small onion
  • 2 cloves of sliced garlic
  • 1 cup shredded cheddar cheese
  • ¼ cup parmesan cheese, shredded
  • A dash of salt and pepper
  • Fresh dill for taste
  • Some oatmeal if necessary

Instructions

  1. Place zucchini on paper towels sprinkle salt over the slices. Leave them for 15 minutes. Flip the zucchini over and repeat the salting process. Pat the zucchini dry with a towel, this will keep the zucchini from getting mushy.
  2. Preheat the oven to 400 degrees F.
  3. One sliced onion and 2 cloves of garlic fried in minimum oil until fragrant. Then add the sliced green onion (the white part only) and stir until the onion is translucent.
  4. Add dried zucchini, some spinach, other green leaves, some sliced garlic, and a little bit of curry, covered with lead, and let it cook. At the end put the cheese mix and put it back in the oven till the cheese is melted. Top it with fresh dill.
  5. If it still had too much water, add some oatmeal to make it dense and put it in the oven for 15-20 minutes.
