Cilantro Tofu Soup

Who said you can’t eat soup for breakfast?! If you’re in my Key3 Metabolism Makeover program and you don’t like smoothies for winter, then this is a good alternative. It gives you some morning protein in an easy to digest and warming way!

Cook Time: 10 minutes

Total Time: 15 minutes

Ingredients

  • 1 tsp olive oil
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup carrots, chopped
  • 1/4 cup broccoli florets 
  • 1 cup extra firm organic tofu, chopped and drained 
  • 2 cups vegetable broth (low sodium)
  • 1 tbsp coconut aminos or tamari 
  • 1/4 tsp crushed black pepper
  • 1/2 tsp lemon juice
  • Salt as desired 

Instructions

1.  Saute olive oil and cilantro for about 30 seconds.
2. Add carrots and broccoli and saute for another 30 seconds.
3. Add tofu and saute again for one minute.
4. Add remaining ingredients (vegetable broth, coconut aminos, black pepper, lemon juice and salt) and cook uncovered on medium heat for about 6 more mins.
6. That’s it! Sprinkle the remaining fresh chopped cilantro on top and enjoy warm!
