Ingredients

200g firm tofu, pressed and cubed

4 cups fresh spinach, washed and chopped

1 onion, finely chopped

2 tomatoes, diced

2 cloves garlic, minced

1-inch ginger, grated

1 teaspoon cumin seeds

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

– 1/2 teaspoon red chili powder (adjust to taste)

– Salt to taste

– 2 tablespoons olive oil

– 2 tablespoons cashews (optional, for creaminess)

– 1/2 cup water

Instructions

 

1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

2. Add finely chopped onions and sauté until golden brown.

3. Add minced garlic and grated ginger, sauté for a minute until fragrant.

4. Stir in diced tomatoes and cook until they become soft and the oil starts to separate.

5. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.

6. Add chopped spinach to the pan and cook until it wilts down.

7. If using cashews, blend them with water to make a smooth paste. Add this paste to the pan and mix well.

8. Gently fold in the cubed tofu, ensuring it is coated with the spinach and spice mixture.

9. Cover the pan and let it simmer on low heat for 5-7 minutes, allowing the flavors to meld.

10. Adjust seasoning if needed and serve the Palak Tofu hot.
