Turmeric Energy Bites

Ingredients

1 1/2 cups rolled oats

1/4 cup walnuts, finely chopped

1/4 cup chia seeds

1/2 cup nut butter (almond or peanut)

1/4 cup 100% pure maple syrup

1 tsp lemon zest

2 tbsp lemon juice, fresh squeezed

1 tsp ground turmeric

Pinch of salt and pepper

Instructions

  1. In a medium bowl, add the oats, walnuts, and chia seeds. Mix in the nut butter, maple syrup, lemon zest, lemon juice, turmeric, and a small pinch of salt and pepper. Add additional syrup or nut butter if mixture is too dry.
  2. Use a tablespoon to portion out the mixture, and roll each into a ball. Place balls onto a plate or baking sheet with parchment paper. Place plate in the fridge and allow to chill for 20 minutes.
  3. Transfer the balls to an airtight container and store for up to 1 week.
