Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced red pepper
  • 1 cup diced green pepper
  • 1 cup diced yellow onion
  • 2 cups packed baby spinach roughly chopped
  • 1 cup mushrooms diced
  • 2 cloves garlic minced
  • salt to taste
  • 4 large eggs *
  • 4 large egg whites *
  • hot sauce optional for drizzling on top!

Instructions

Preheat oven to 350°F and grease a 12-slot muffin tin well. Set aside. Heat a skillet over medium, then add oil, red and green peppers, and onion. Cook for 5-7 minutes, stirring, until peppers soften. Mix in spinach, mushrooms, and after 2 minutes, add garlic. Season with salt and turn off heat. Whisk eggs in a 4-cup measure, mix in cooked veggies, and pour into muffin tin. Bake 15-30 minutes until tops are firm. Cool a bit, then serve!
