One Pot Quinoa Chicken Dish

Ingredients

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 bell pepper, diced

1 cup quinoa, rinsed

2 cups vegetable broth

1 pound chicken breast, cut into bite-sized pieces

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

Optional toppings: chopped fresh cilantro, avocado slices, lime wedges

Instructions

1.Heat olive oil in a large skillet or pot over medium heat. Add diced onion, minced garlic, and diced bell pepper. Sauté until softened, about 5 minutes.

2. Add rinsed quinoa to the skillet and toast for 2-3 minutes, stirring frequently.

3. Pour in the vegetable broth and add the chicken pieces to the skillet. Season with paprika, cumin, salt, and pepper.

4. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 15-20 minutes, or until the quinoa is cooked through and the chicken is cooked and tender.

5. Once cooked, remove from heat and let it sit covered for a few minutes.

6. Fluff the quinoa with a fork and adjust seasoning if necessary.

7. Serve hot, garnished with chopped fresh cilantro, avocado slices, and lime wedges if desired.
