Ingredients

  • 1 large eggplant (baingan)
    2 tomatoes, chopped
    1 onion, finely chopped
    2 cloves garlic, minced
    1-inch piece of ginger, minced
    1 teaspoon cumin seeds
    1 teaspoon turmeric powder
    1 teaspoon coriander powder
    1/2 teaspoon red chili powder/paprika

1 Jalapeno chopped (optional)
Salt to taste
Fresh coriander/ cilantro leaves for garnish
2 tablespoons olive oil

Instructions

1. Roast the eggplant over an open flame or in the oven until the skin is charred and the flesh is soft. Let it cool, then peel off the skin and mash the flesh.
2. Heat oil in a pan and add cumin seeds. Let them splutter.
3. Add chopped onions, jalapeno (green chilies), garlic, and ginger. Sauté until onions turn golden brown.
4. Add chopped tomatoes and cook until they turn soft and mushy.
5. Add turmeric powder, coriander powder, red chili powder/paprika , and salt. Mix well.
6. Add the mashed eggplant and mix everything together. Cook for 5-7 minutes, stirring occasionally.
7. Garnish with fresh coriander / cilantro leaves.
8. Serve hot with roti/ naan/ bread/ Cauliflower rice or normal rice.
