Curry Tofu and Bok Choy Stir-Fry

Ingredients
1 1/4 cups plus 2 tbsp Gut Broth (or vegetable broth)
1/2 cup canned coconut milk
1 tbsp curry powder
1 tbsp garam masala powder
2 scallions (green parts only), thinly sliced
2 tbsp fresh grated ginger
1 tbsp coconut aminos
3 cups bok choy (separate leaves and stems)
3 ounces canned bamboo shoots (rinse and drain)
8 ounces organic firm tofu (pressed and cubed)
1 tsp olive oil
1 cup cooked rice, for serving
1/2 lime, for serving
Cilantro, chopped, for serving
Instructions
- In a medium bowl, whisk 1 1/4 cup broth, coconut milk, yellow curry powder, and garam marsala until well mixed. Set aside.
- In a large skillet, heat the remaining 2 tbsp broth over medium-high heat until shimmering. Add the scallions, ginger, and coconut aminos. Stir until mixture is fragrant and ginger is broken down, about 1 minute.
- Add the bok choy stems and bamboo shoots. Cook for about 5 minutes, until softened. Add in more broth if necessary.
- Toss the tofu with olive oil. Add tofu to the skillet and gently stir to mix with bok choy and bamboo shoots.
- Reduce heat to low and add the coconut milk and broth mixture. Add the bok choy leaves. Cover with lid and let simmer for 10 minutes, until sauce is thickened.
- Serve over brown rice. Add optional cilantro and squeeze lime over top for added flavor.
Note: Cook rice according to package directions, if needed, while cooking the tofu and bok choy.
