Ingredients

  • 1 package of Konjac Noodles
  • 3/4 cup of cooked chicken, shredded
  • 1/4 cup of mushroom
  • ¾ cup cilantro 
  • ½ cup scallions (white and green parts)
  •  teaspoon sesame seed
  • Vegetable oil for frying
  • 1 teaspoon garlic paste

For the sauce:

  •  tablespoons Tamari sauce
  •  tablespoon sesame oil
  • teaspoon chilli paste

Instructions

  1. You can always use rotisserie chicken for recipes that need shredded chicken.
  2. Add the noodles to a saucepan and add enough water to cover them. Bring the water to a boil, and then reduce the heat to low and simmer for 15 minutes. Drain, rinse, and return them to the saucepan.
  3. Meanwhile, in a small bowl, mix the tamari with the sesame oil and chilli paste. Pour this over the noodles, gently toss, cover and set aside.
  4. Lightly coat a sauté pan with oil and place it over medium heat. Add the mushrooms garlic and ginger, and stir to combine. When the mushrooms are tender, add the cilantro, chicken, scallions and sesame seeds. Stir, cook for about 30 seconds, and turn off the heat.
  5. Add the noodles to the sauté pan and turn the heat on to low. Gently toss all of the ingredients together, warm and serve.
