Ingredients

cookie dough:

  • 1/4 cup ghee melted, or coconut oil
  • 1/4 pure maple syrup
  • 1/4 cup pure maple sugar
  • 1 tsp pure vanilla extract
  • 1 large egg at room temperature
  • 2 cups blanched almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp fine-grain sea salt
  • 3/4 cup chopped walnuts

maple glaze:

  • 1/2 cup powdered maple sugar
  • 2 tsp almond milk
  • 1/2 tsp Vanilla

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together ghee or coconut oil, maple syrup, maple sugar, vanilla, and egg. In a separate bowl, combine almond flour, baking soda, and salt. Stir the dry mixture into the wet, then add chopped walnuts.
  3. Chill the dough for 10-20 minutes, then scoop onto the baking sheet. Gently press down on each mound.
  4. Bake for 10-12 minutes until golden brown. Let cool on the sheet for 10 minutes, then transfer to wire racks to cool completely.

For the maple glaze:

  1. Mix powdered maple sugar, almond milk, and vanilla until drizzly consistency.
  2. Drizzle glaze over cooled cookies. Allow it to set for 20 minutes before serving.

Store leftovers at room temperature for 2 days, refrigerate for up to a week, or freeze for longer storage. Enjoy!
