Kale and White Bean Salad

Fiber-filled, nutrient-dense salad with a creamy, flavorful dressing!

Ingredients

1 heaping cup kale (stems removed and chopped)

3 tsp coconut aminos

1 heaping cup spinach leaves

1/4 cup white beans (Great Northern or Cannellini)

1/4 red onion (diced)

Pinch of salt

Pinch of pepper

1/4 avocado

2 tbsp almond butter

2 tbsp nuts of choice (optional)

1/4 Lemon (optional)

Instructions

  1. In a medium bowl, drizzle 1 tsp of the coconut aminos over the kale. Massage the kale with your hands to wilt and break down the kale. Add the spinach, beans, optional red onion, salt and pepper and toss together.
  2. In small bowl, mash the avocado with fork. Add the almond butter and remaining coconut aminos. Whisk together until smooth.
  3. Pour the dressing over the kale and toss together with hands or tongs. Add the nuts and serve. Optional to add squeeze of lemon over the top.

Note: To store half the salad for a later time, store dressing and vegetables separately. Mix together right before serving.
