Ingredients

6 eggs, hard-boiled and peeled
2 onions, finely chopped
2 tomatoes, finely chopped
1-inch piece of ginger, grated
4 cloves garlic, minced
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder / paprika (adjust to taste)
1/2 teaspoon garam masala powder
Salt to taste
Fresh coriander/cilantro leaves for garnish
2 tablespoons oil
Water as needed

2 jalapenos or green chilies, slit lengthwise (optional)

 

 

Instructions

1. Heat oil in a pan and add cumin seeds. Let them splutter.
2. Add chopped onions and sauté until golden brown.
3. Add ginger and garlic, sauté for another minute.
4. Add chopped tomatoes and green chilies(optional). Cook until tomatoes are soft and mushy.
5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
6. Add water to achieve desired consistency for the gravy.
7. Gently add the boiled eggs to the gravy. Cover and simmer for 5-7 minutes.
8. Sprinkle garam masala powder and garnish with fresh coriander/cilantro  leaves.
9. Serve hot with rice(normal or cauliflower) or roti.
