Ingredients

2 cups rolled oats

1 cup unsweetened, shredded coconut (optional)

1 cup chopped nuts of choice (walnuts, almonds, pecans)

2 tbsp chia seeds

2 tbsp ground flaxseed

3 tbsp pumpkin seeds

1 tsp cinnamon

3/4 tsp salt

2 tbsp coconut oil

1/4 cup 100% pure maple syrup

1 tsp vanilla

Instructions

  1. Preheat the oven to 250. Get a baking sheet ready with parchment paper.
  2. In a large bowl, combine the oats, optional coconut, nuts, chia seeds, flaxseed, pumpkin seeds, cinnamon, and salt.
  3. In a small saucepan, melt the coconut oil over medium heat. Whisk the syrup into the oil. Bring to a simmer, and add the vanilla. Then remove from heat.
  4. Add the syrup mixture to the oats. Mix until well blended. Spread the granola on the baking sheet.
  5. Bake for 90 minutes until golden brown. Be sure to stir it every 15-20 minutes.
  6. Remove from oven and allow to cool completely. Store in airtight container for up to 5 weeks in the fridge. You can alternatively store in the freezer for up to 3 months.
