Ingredients

  • 1 cup old-fashioned rolled oats
  •  ¾ cup whole wheat flour
  • ⅓ cup light brown sugar (or a sugar substitute)
  •  ½ teaspoon ground cinnamon
  •  ¼ teaspoon salt
  •  6 tablespoons unsalted butter, melted (or melted coconut oil as a substitute)
  •  2 cups fresh blueberries (about 10 ounces; frozen blueberries can also be used)
  •  1 teaspoon cornstarch
  •  1 tablespoon freshly squeezed lemon juice
  •  1 tablespoon granulated sugar, divided

Instructions

 

1. Preheat your oven to 375°F and position a rack in the center. Line an 8×8-inch baking pan with parchment paper, leaving the paper overhanging on two sides to create handles.

 

2. In a medium bowl, mix together the oats, whole wheat flour, brown sugar, cinnamon, and salt. Add the melted butter and stir until the mixture forms clumps and the dry ingredients are evenly moistened. Set aside ½ cup of the crumble mixture, then press the remaining mixture firmly into the bottom of the prepared pan. Use the back of a measuring cup if needed to press it down firmly.

 

3. Distribute half of the blueberries evenly over the crust. Sprinkle the cornstarch on top, followed by the lemon juice and ½ tablespoon of granulated sugar. Add the remaining blueberries and sprinkle the rest of the granulated sugar on top. Finally, evenly sprinkle the reserved crumble mixture over the top, leaving some fruit visible.

 

4. Bake the bars for 30 to 40 minutes, or until the fruit is bubbly and the crumb topping is golden brown and toasty. Allow the pan to cool on a wire rack until completely cooled (you can expedite this process by placing it in the refrigerator).

 

5. While the bars cool, prepare the glaze: In a medium bowl, whisk together the powdered sugar, vanilla, and milk until smooth. Add more milk if you prefer a thinner consistency. Use the parchment paper handles to lift the bars from the pan, drizzle with the glaze, slice, and serve.
