1/4 cup cashews, soaked in boiling water for 30 minutes, drained
1/2 orange bell pepper
1/2 cup plant-based milk (almond or coconut)
1.5 tbsp nutritional yeast
1 tsp chili powder
Pinch of salt
Instructions
Soak cashews in boiling water.
Meanwhile, in a small saucepan, bring 2 cups water to a boil. Add potatoes and reduce heat to medium heat. Simmer for 8-12 minutes, until potatoes are fork tender.
Add drained potatoes and all ingredients to a blender. Blend until smooth and creamy.
Note: To make a spicy sauce, add jalapeños. For smoky sauce, add smoky paprika.
