Ingredients

2 medium sweet potatoes

Lentil Taco Filling

Creamy Cilantro Dressing 

Taco toppings (lettuce, tomatoes, cilantro, avocado, lime)

Instructions

  1. Preheat the oven to 400.
  2. Pierce the sweet potato a few times on each side using a fork or knife. Wrap in aluminum foil, and place directly onto the oven rack. Cook for about 45-60 minutes, or until tender. To test for doneness, pierce sweet potato with a fork and check for level of tenderness.
  3. Remove from the oven and allow to cool slightly. Cut sweet potato down the middle, lengthwise.
  4. To assemble, place taco filling, dressing, and your desired taco toppings.
