Ingredients

  • 1 cup baby spinach, lightly packed and chopped
  •  3/4 cup red bell pepper, finely diced (about 1 small pepper)
  •  3/4 cup green bell pepper, finely diced (about 1 small pepper)
  •  3/4 cup cherry or grape tomatoes, quartered
  •  6 large eggs
  •  4 large egg whites
  •  1/4 teaspoon kosher salt
  •  1/4 teaspoon dried basil
  •  1/4 teaspoon dried oregano
  •  Pinch of ground black pepper or cayenne pepper (for a little kick)
  •  1/4 cup crumbled feta cheese, plus extra for topping.

Instructions

1. Preheat your oven to 350°F and place a rack in the center.

2. Lightly coat a standard 12-cup muffin tin with nonstick spray.

3. Divide the chopped spinach, diced red and green bell peppers, and quartered tomatoes among the muffin cups, filling each about two-thirds full.

4. In a bowl, whisk together the eggs, egg whites, kosher salt, dried basil, dried oregano, and a pinch of black or cayenne pepper.

5. Carefully pour the egg mixture into each muffin cup, filling them three-quarters full.

6. Sprinkle the crumbled feta cheese evenly over the top of each muffin cup.

7. Bake for 24 to 28 minutes, or until the egg muffins are set.

8. Let the muffins cool for a few minutes, then run a butter knife around the edges to loosen them from the pan.

9. Remove the muffins and enjoy immediately, or let them cool on a wire rack. Refrigerate or freeze for later use.
