  • 1 large egg + 1 egg yolk
  • 2/3 cup organic coconut oil soft but still solid
  • 2/3 cup organic coconut sugar
  • 2 tsp pure vanilla extract
  • 1 3/4 cups blanched almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 cup chopped dark chocolate or dark chocolate chips (or a combination)
  • Optional – vanilla flavored coconut ice cream to top plus extra chopped dark chocolate

Instructions

Here’s how you make them:

  1. Preheat the oven to 350 degrees and grease two 6.5-inch oven-proof skillets (or one 9-10 inch skillet) with coconut oil.
  2. In a large bowl, whisk together coconut oil and coconut sugar, then beat in vanilla, egg, and egg yolk until smooth.
  3. In a separate bowl, mix almond flour, salt, and baking soda, then add to the wet ingredients and beat until a sticky dough forms.
  4. Stir in chopped chocolate or chocolate chips, then transfer the mixture to the skillet(s).
  5. Bake for 15 minutes, until the middle is set and the edges are golden brown.
  6. Let cool in the skillet(s), then serve with ice cream, if desired. Enjoy!
