Tuna Boats

This is a great high protein and fiber option to keep you nourished and full, feeding your good gut bugs and keeping your blood sugar and hormones stable. Can eat with some flax crackers (or other crackers) instead of pepper if you’d like. I also love adding some mustard on top for an extra punch, and some sauerkraut with it for a powerful boost of probiotics. Enjoy!

As tuna can be high in Mercury make sure to use good brands of canned tuna like Wild planet or Safe catch

Ingredients

1 cup tuna (canned or cooked from dry)

1 small red onion, finely chopped

Bell pepper boats ( de- seed the peppers and cut in half)

1 medium tomato, diced

1 cucumber, diced

1/4 cup chopped parsley ( basil/ dill)

Pink Salt to taste

Fresh lemon juice

Instructions

1. In a large mixing bowl, combine tuna, chopped red onion, diced tomato, diced cucumber.

2. Add parsley(basil/ dill) ,pepper and salt to the bowl.


3. Gently toss all the ingredients together until well combined.

4. Taste and adjust the seasoning, adding more black pepper or salt if needed. If you like it tangier, you can squeeze fresh lemon juice over the preparation.

5. Stuff the filling into the bell pepper boat and enjoy:)
